Switch On! Your Holiday Recipes
Eating healthy, vegan holiday food can get complicated during the hustle and bustle. Here are 5, 20-minute or less holiday healthy, vegan, gluten-free online nutrition recipes for you to enjoy with easy to find ingredients and traditional flavors.
*Inside Out Apple Pie
6-granny smith or gala apples
2 cups walnuts
1 teaspoon ground cinnamon
1/4 teaspoon cloves
1/2 teaspoon allspice
1/2 teaspoon orange zest
1/4 cup of raisins
1/8 cup dark brown sugar
2 tablespoons coconut oil (save until the end)
preheat oven to 400 F
With a sharp knife hollow out the core of the apples, being careful to not cut through the bottom of the apple (about 1/2" from the bottom and 11/2" in diameter)
In a food processer mix the additional ingredients roughly, try not to make the walnuts too fine. Stuff the apples with the processed mixture, place on a wax paper lined baking sheet and drizzle with the coconut oil. Cover with foil and place in the oven for around 20 minutes or until the apples swell in size. Check them at 10 and 15 minutes to ensure they do not split. Let cool and serve!
*Family stuffing with a Twist
This has turned into my favorite stuffing in recent years. Growing up with the idea that mo' butter= mo'better had to change for health reasons as well as playing with gluten free recipes. So here is what I got!
2 cups wild rice
1-cup short grain brown rice
3 cups water
3 cups organic 100% apple juice
1 can sliced water chestnuts
1 bunch chopped organic celery
1 chopped finely brown onion
1/2 cup dried cranberries
1 cup sliced raw shitake mushrooms
1 teaspoon sea salt
1/8 cup Extra Virgin Olive Oil (EVOO)
This is where I reveal how lazy I am. I place all the ingredients in my rice cooker and when it pops! Voila! Vegan, gluten free family style stuffing! You could place it in the oven and bake it for 2-3 hours until ready if you wanted to bake.... but why?
*Almond Cranberry Crusted Tofu Fillet
Easiest way to get that delicious Smokey flavor in a vegan - gluten-free holiday dish
Extra Firm Tofu
1 cup almonds
2 cloves garlic
1" peeled fresh ginger
1" peeled fresh turmeric (if you don't have fresh 1/2 teaspoon of dried turmeric powder)
A bunch of Italian parsley
1/2-teaspoon sea salt
2 Tablespoons Coconut oil
Raisins or cranberries (for topping after)
Preheat the oven to 375f
Slice the tofu 1 1/2" thick, wrap in a clean kitchen cloth or paper towel and place a cutting board evenly with something weighted over the top. This drains the excess water from the tofu. Leave for 10 minutes
Pat the tofu dry place on a baking sheet and brush with coconut oil.
Place the remaining ingredients in a food processor and mix until a fine pasty crumb is made.
Gently push the mixture onto the tops of the tofu slices, making sure to cover them completely. It is ok if it spills over. Drizzles with a bit more coconut oil and place in the oven until the crust is a nice golden brown. You will smell it before it is done as the almonds release there oils. My mouth is salivating just at the memory!
